What is a Gumbo?

Gumbo is a stew or soup originating in Louisiana which is popular across the Gulf Coast of the United States and into the U.S. South. It consists primarily of a strong stock, meat and/or shellfish, a thickener, and the vegetable "holy trinity" of celery, bell peppers, and onion. The key ingredient is okra, from the African name of which the dish takes its name.Having originated in New Orleans, Louisiana, created by the French, but enhanced by additions from other cultures, gumbo is the result of the melting of cultures in Louisianan history. ~wikipedia.org

The recipe below is a popular method to make a seafood gumbo made with shrimp, crab and oysters. Made with high quality ingredients, this is a rich tasting gumbo brusting with seafood flavour.

Gourmet Seafood Gumbo

Ingredients

6 Tbsp. Flour
1/2 Cup Shortening
6 cloves Garlic, chopped
1/2 Cup diced Onion
1/4 Cup chopped Bell Pepper
1/2 Cup chopped Celery
2 lbs. peeled raw large Shrimp
1 (8 oz.) can Tomato Sauce
3 quarts Water
1 lbs. Snow Crab meat or other Claw Crab meat
1/4 bunch chopped Parsley
1/2 tsp. Thyme
3 Bay Leaves
1 8 (oz.) pkg. frozen Okra (also known as gumbo)
1/2 pint Oysters with Juice
Salt and Pepper

Preparation

Make a *roux with the flour and shortening. Add garlic and cook until golden brown. Add onion, bell pepper, and celery and cook until transparent. Add shrimp and tomato sauce, simmer 10 minutes, stir in water, and blend well. Add all other ingredients except okra and oysters. Cook 1 hour, add okra, and cook 20 minutes. Add oysters and cook 10 minutes longer. Serve in a soup bowl over steamed rice.
