Tilapia Recipes

Fresh high quality Tilapia is available year-round as it is widely farmed. Tilapia farming and consumption are rapidly increasing in the US. Tilapia is now the fifth most popular seafood consumed in the United States.

The meat is typically white, although it may vary some. The firm, flaky texture of tilapia has a sweet mild flavor. This fish is a great choice for a low carb diet or any healthy meal. Tilapia contains 93 calories in a 3-1/2 oz. portion and 1.1 grams of fat. It is an excellent substitute in any white fish recipe and has a high moisture content and a good body shape for grilling.

Pan seared Tilapia in Chile Lime Butter Serves 6

Ingredients

For Chile lime butter

1/2 stick (1/4 cup) unsalted butter, softened
1 tablespoon finely chopped shallot
1 teaspoon finely grated fresh lime zest
2 teaspoons fresh lime juice
1 teaspoon minced fresh Thai or Serrano Chile
1/2 teaspoon salt

For The fish

6 (5 to 6oz) pieces skinless tilapia fillet
1/2 teaspoon salt
2 tablespoons vegetable oil

Cooking Directions

To make Chile lime butter:
Stir together butter, shallot, zest, lime juice, Chile, and salt in a bowl.

To Prepare the fish:
Pat fish dry and sprinkle with salt.
Heat 1 tablespoon oil in a 12-inch nonstick skillet over moderately high heat until just smoking,
Then sauté 3 pieces of fish, turning over once with a spatula, until golden brown and are just cooked through, 4 to 5 minutes, and transfer to a plate.
Sauté remaining fish in the same manner

Serving the meal
Serve each piece of fish with a dollop of Chile lime butter.

Tilapia with Garlic Butter (Serves 2)

Ingredients

2 tablespoons butter
2 cloves garlic, finely minced
dash pepper
dash salt
pinch dried dill weed or parsley
dash paprika
4 tilapia fillets

Directions

In saucepan, combine butter, garlic, pepper, salt, dill weed, and paprika. Heat over low heat until butter is melted and starts simmering. Remove from heat. Brush a little of the butter mixture in the bottom of a shallow baking dish, line baking dish with foil, if desired, then place tilapia fillets on the buttered area. Brush top of each tilapia fillet with the seasoned butter mixture. Bake at 350° for 12 to 15 minutes, until the fish flakes easily with a fork.

Tilapia In Beer Batter

4-6 Tilapia fillets
Juice of ½ lemon
2 Tbls. chopped parsley
2 Tbls. cooking oil
salt and freshly ground pepper
Oil for deep frying

Beer Batter
2 large egg yolks
½ cup beer
½ cup flour
½ tsp. salt
½ tsp baking powder

Directions

Cut fillets into 2" pieces. Put in a bowl with lemon juice, parsley, 2 Tbls. cooking oil, and salt and pepper to taste. Heat oil for deep frying. Dip pieces of fish individually into batter, and then into hot oil. Cook, turning and submerging pieces in the oil until golden brown all over. Drain on paper towels. Makes 4 servings.
